[Foodie] Oatmeal Pancake

Ingredients:
*1 cup oats (regular or quick)
*2 eggs
*1 cup low-fat cottage cheese
*1/2 tsp baking powder
*1 tsp vanilla extract
*1 tsp cinnamon
*1/4 cup soya milk
* dash of salt

Directions:
Add all of the ingredients to a food processor or blender. Blend until  completely combined and smooth. Let it sit for at least 5 minutes. 
Heat a non-stick skillet or griddle over medium heat. 
Add pancake batter to pan. Cook for about 3-4 minutes or until tiny bubbles form on the top of the pancake. 
Flip and cook another 2-4 minutes until done. 
Serve with maple syrup.
